- 2 1/2 cups grilled chicken breast, chilled and chopped
- 1/2 cup mayonnaise
- 1/2 cup apple, diced
- 1/4 cup roasted cashews
- 1/4 cup carrots, diced
- 1/4 cup celery, diced
- 1/4 cup red onion, diced
- 1 1/2 – 2 tablespoons curry powder
- Sea salt to taste (optional)
- Lettuce leaves
Directions
In a large bowl, mix together the cooked chicken breast, mayonnaise, apple, cashews, carrots, celery, red onion, curry powder and sea salt. Serve in lettuce leaves like a wrap or on top of fresh salad greens. Enjoy!
