
Delicious Dark Chocolate Truffles

We love it when fruits and veggies come together with dessert to make a sweet yet healthier treat we can feel good about serving our family. That’s why we had to share our dark chocolate truffle recipe. The truffles’ rich cocoa flavor is the indulgence we crave after a nice meal, but they are made with avocados, so we get an extra boost of health benefits, including vitamins K, C, B5, B6 and E.

Dark Chocolate Truffles
Ingredients:
- 1 medium avocado, mashed
- 6 ounces dark chocolate chips
- 2 tablespoons maple syrup
- 1/4 teaspoon vanilla extract
- 1/8 teaspoon salt
- 2 1/2 tablespoons unsweetened cocoa powder (divided)
- Assorted toppings as desired: coconut, crushed nuts, shredded coconut, sprinkles
Directions:
Melt the chocolate in the microwave or on the stove, taking care not to burn it.
Once melted, stir in the mashed avocado, brown sugar, vanilla extract, salt, and 1 1/2 tablespoons of the cocoa powder until thoroughly combined.
Place the truffle mixture into the fridge for 30-40 minutes to cool until partially set.
Use a mini ice cream scoop to portion the mixture into balls; then roll them in cocoa powder or topping of choice.
Store up to 1 week in the refrigerator.
