
Key Lime Parfait with Coconut
A parfait is not only tasty, it’s also beautiful to look at. Our key lime yogurt parfait brings delicious layers of tart lime, vanilla yogurt and crispy graham crackers together to create a light, mildly sweet and slightly tart dessert that will finish off your dinner with plenty of happy smiles. And best of all, it’s so easy to make.
INGREDIENTS
For Graham Cracker Crumble:
- 2 sleeves graham crackers
- 1 tablespoon butter, melted
- 1 tablespoon maple syrup
- Pinch of salt
For Key Lime Mousse Layer:
- 1 large avocado
- 3 key limes, juiced
- 1 key lime, zested
- 4 oz. vanilla low-fat Greek yogurt
- Pinch of salt
- 1 tablespoon maple syrup
For Yogurt Layer:
- 8 oz. flavored low-fat yogurt (vanilla, lime or coconut works great)
Instructions:
- Using a food processor, pulse graham crackers until crumbled. Add melted butter, maple syrup, and salt. Pulse again until combined. Transfer to a bowl until ready to assemble.
- Wipe the food processor and add avocado, key lime juice, key lime zest, Greek yogurt, salt, and maple syrup. Pulse until smoothly blended.
- Line the bottom of each parfait dish (or use a glass) with graham cracker crumbles. (Reserve a small amount for topping.)
- Lightly press to pack the crust, then alternate layers of key lime mousse and yogurt.
- Garnish with remaining graham cracker crumble, toasted coconut or a slice of lime for color.
