
Grilled Peach, Watermelon and Spring Greens Salad
We all know the grill infuses our favorite meats with delicious, barbecued goodness. But, we have a recipe here to take that fresh-grilled taste to new heights.
Together, a plentiful harvest of fresh produce and grilled fresh peaches make a tasty salad that pairs nicely with any meat fresh off the grill. It’s simple, quick and comes together in less than 30 minutes!
For the salad
- 2 firm ripe peaches, quartered (about 1 lb.)
- 2 cups cubed watermelon
- About 10 ounces of mixed spring greens
- 1/2 cup crumbled goat or feta cheese
- 1/2 cup fresh mint leaves
- 3/4 cup roughly chopped toasted pistachios
For the dressing
- 1/4 cup extra-virgin olive oil
- 3 tablespoons of your favorite vinegar
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
Preheat grill to high.
Place peaches, cut sides down, on oiled grates. Grill the peaches uncovered until well charred, about 4 minutes on each side.
Prepare the salad:
Toss greens, watermelon, cheese, mint and pistachios in a large bowl.
To make the dressing:
Whisk together olive oil, vinegar, lemon juice, mustard, honey, salt, and pepper in a medium bowl. Drizzle vinaigrette over salad, top with grilled peaches and serve.
