One of the most versatile and juicy fruits of the season is the peach, which can be used in a variety of dishes. From tangy and sweet Peach Salsa to cool and creamy Peach Popsicles, these recipes just might become your go-to sunny day treats. Nothing beats a cold refreshing treat on a hot summer day! Popsicles are a great treat, and peaches (or nectarines or plums) are full of vitamins A and C, potassium, fiber, and antioxidants.

Fresh Peach Salsa

Peaches are a great source of vitamins A and C, potassium, and dietary fiber. Interestingly, both peaches and nectarines are in the same family, though nectarines don’t have the fuzzy skin. You can enjoy peaches throughout the whole summer; usually the best time to buy peaches is the end of June through August!

Ingredients

  • 1 pound Roma tomatoes, diced
  • 1 ½ pounds firm peaches, diced
  • 1 red bell pepper, seeded and diced
  • 2 shallots, diced
  • 1 jalapeño, seeded and diced
  • 1 bunch cilantro, stems removed, finely chopped
  • 1 small avocado, chopped
  • ¼ cup fresh lime juice
  • 1 teaspoon sea salt

Directions

  • In a large bowl, add the tomatoes, bell pepper, jalapeño, shallots, and peaches. Toss to combine.
  • Add in the cilantro, avocado, lime juice and salt. Toss and mix together. Taste and adjust seasonings as needed.

Peach Popsicles

Ingredients

  • 1 ½ cups diced ripe peaches (use nectarines or plums instead)
  • ¼ cup maple syrup
  • 3 tablespoons water
  • 1 ¼ cups low-fat vanilla yogurt

Directions

  • Combine fruit, maple syrup, and water in a 2-quart microwave-safe bowl. Cover with plastic and poke a few holes in the top. Microwave on High for 2 minutes. Stir, then microwave, covered, on High at 1-minute intervals until the fruit is tender, about 2 minutes more. Uncover and let cool for 10 minutes.
  • Puree the mixture in a food processor until very smooth. Add yogurt and process until combined. Transfer to a 4-cup measuring cup and stir in more yogurt, if needed, to yield 2 ¼ cups.
  • Freeze in six 3-ounce (or similar size) pop molds until solid, about 6 hours. To unmold, dip the forms into warm water for 10 to 20 seconds. If necessary, use a table knife to break the vacuum and pry the pops loose.
